This is a recipe from the wonderful people at Genius Kitchen so all credit goes to them. I have a couple of jars under the tree for family, this is so simple to make but looks amazing.

The smell of the tomatoes when you open the packet is divine so I am thinking of making myself one just to smell them again.

This recipe uses alot of stock so there is no need to add any extra. But you may want to change up the herbs or add more tomatoes depending on your or your recipents tastes.

Method

1.

To create the jars: Combine all the herbs spices and stock in a small bowl until well combined.

Add these to a jar to create the first layer. I used a cleaned jar that used to hold 680g of pickes.

Add the sun dried tomatoes for the next layer, then top up the jar with rice.

To make the risotto: You will need 1/4 cup freshly grated parmesan or romano cheese.

In a large, heavy saucepan bring 3 cups of water to a boil and add the contents of the jar.

Stir well and return to a boil; reduce heat, cover and simmer for 20 minutes (do not lift the cover).

Remove from the heat and let stand, covered for 5 minutes. Rice should be tender but slightly firm. Stir in the cheese and enjoy.
