The recipients are big mushroom fan's which I hope translates into them loving this dish.

I couldn't look past making these this year as the layering is so pretty and its so zen putting each intricate layer together, its kind of like one of those sand gardens with the tiny rakes.

This is what the book had to say: Earthy mushrooms and savoury seasonings make this cheesey risotto especially good. Present it to someone in a decorated jar, or in an italian gift basket.

The recipe calls for a 4 cup jar to be used however mine were only 750ml and they still worked, though it was a tight squeeze to get the mushrooms in there.

Method

1.

To make the jars: Place all ingredients except the mushrooms into jar, one at a time in the order given,  to create the layers.

2.

Put mushrooms into a decorative cellophane bag. place on top of the rice in the jar.

3.

To make the risotto: You will need parmesan (approximately 1 cup or to taste).

Put mushrooms into a small bowl and cover with warm water. Let stand for 10 minutes then drain.

4.

Bring 4 ½ cups water to the boil. Lower heat, cover and leave to simmer.

5.

Place 1 cup cold water, and 1 tablespoon butter into a medium saucepan and bring to a boil. Reduce heat to simmer then add mushrooms. Stir well.

6.

Add contents of jar and stir constantly until liquid is almost absorbed.

7.

Use a ladle to add hot water to saucepan one spoonful at a time. Stir well after each addition only adding more when the liquid has absorbed.

8.

The mixture should be moist and creamy and rice should be tender after all the water has been added. Stir in parmesan cheese and serve.
