Maple Bacon with Crumpets
Everything is better with bacon. It’s a fact a cooking fact! Then go and add maple syrup to it, go on try it! The sweet and salty together it’s simply heaven. You could make this recipe for breakfast lunch or dinner. It’s always dinner in my house but really bacon is great any time of day.
I use shortcut bacon as I am not a fan of fat on meat. I know fat does add flavour I just can’t stomach it so shortcut it is in my house but you could use whichever cut of bacon is your favourite.
Maple bacon is great with pikelets, crepes, and waffles too! Served with mascarpone and a swirl of maple syrup there are so many options and probably more I haven’t even thought of yet. To be honest I’m pretty sure that maple bacon goes with everything.

Method
1.Melt butter in frypan over high heat until it bubbles. Coat the entire base of the pan with butter.
2.Add bacon and cook for 5-7 minutes each side, until it is cooked but not crispy yet.
3.Toast the crumpets.
4.Reduce heat to medium and add 1 tablespoon of maple syrup to pan. Drizzle over all the bacon slices then cook until the edges start to turn crispy.
5.Flip bacon and add remaining maple syrup drizzling over all the bacon. Cook until edges are really crispy.
6.Reheat crumpets if needed, top with maple bacon, and more maple syrup. You can also top crumpets with mascarpone cheese before adding maple syrup and bacon. Enjoy!
