One of my go to recipes when I have a few old bananas that need to be eaten. I love eating toasted slices of this with butter on top so delicious!

Usually it's so hot here that the coconut oil is a liquid however if it hardens then heat in the microwave for 10-20 second bursts before adding. Having everything at room temperature before you begin will help.

I like to mix my flour mixture and banana mixture by hand. I think it gives me better control and means I’m less likely to overmix. We don’t want a tough dense banana bread, we want it light and fluffy. I stop mixing as soon as the flour is incorporated. Sometimes after mixing my batter still has a few lumps and bumps (just like me!) and it’s turned out great every bake so far.

I’ve added walnuts before, and also blueberries (coat in flour before adding to the batter) to this loaf and they were both delicious. Start with about ½ a cup of your preferred mix in. I used coconut in the recipe pictured. What will you add to your banana bread? #datewithmykitchen

Method

1.

Preheat oven to 200°C/ 180°C fan-forced. Line and lightly grease a 11 x 21cm x 6cm deep loaf pan.

In a small bowl mash bananas. Set aside.

In a large bowl, beat eggs, oil, honey, milk and vanilla until well combined. Stir in the mashed bananas. Set aside.

In a medium bowl, sift the flour, cinnamon, baking powder and salt. Tip anything left in the sieve into the bowl.

Add flour mixture to the banana mixture. At the same time add any blueberries or nuts if using. Mix until flour is just combined.

6.

Pour batter into prepared pan, sprinkle with some more cinnamon, raw sugar, or banana slices (optional) and bake for 40-50 minutes or until a toothpick inserted comes out clean. 

7.

Cool for 5 minutes in the pan, then remove and cool at least 10 minutes before you start slicing and devouring.
