Ok these are not healthy. Coated in batter and deep fried they are delicious, but not healthy. I usually balance it out by serving only with salad so I can pretend it’s a little healthier. But sometimes you just need a burger!

They make great lunchwiches the next day too. Just slice them up and pop between bread with a little mayo, such an easy way to use any leftovers.  

I like this recipe as it’s so easy to change the flavours simply by adding some herbs or spices. Paprika goes well (either in the batter or coat the chicken before coating in batter), Italian herbs mix or basil and oregano all work well. What herbs will you use? Method

1.

In a medium bowl combine flour, baking powder and salt. Create a well in centre. Add milk and water to flour mixture and whisk until batter is smooth.

Add oil to deep fryer and preheat. To check if ready a small cube of bread will turn golden in about 30 seconds. Preheat oven to 120°C.

 Dip 4 of the chicken strips into batter, allow excess to drip off, slowly place into deep fryer.

Deep fry until golden brown, about 5 minutes each side. Place on wire rack to turn nice and crispy and to drain any excess oil. Place chicken in oven proof dish in oven to keep warm. Repeat with remaining chicken strips.

 Serve on burgers, with salad, or chips. Enjoy!
