I can’t get enough of these! So much nicer than a chocolate bar and fewer calories…well if you can stop eating them!

Last time I added extra dates for a bit more of a caramel flavour. Mm mmm! If you like this idea up the amount of dates to 1 cup and use maple syrup instead of honey.

The great thing about these balls is once you have the basics down you can change it up to keep it interesting. You can add nuts or just change up the peanut butter for another type of nut butter for a different flavour. I use a heaped tablespoon of peanut butter for extra peanutty flavour. The ones pictured were not rolled in coconut and were put in little bags for Christmas presents.

Method

1.

Put all ingredients in blender and blend until smooth. You may need to scrape down the sides of the bowl once or twice to incorporate everything. There will be flecks of weetbix throughout at the end. If it remains too dry too roll add water 1 teaspoon at a time until you can roll it into balls.

Use teaspoon to scoop out mixture and roll into balls. Roll the balls in extra coconut to coat the outside.

Set on tray in fridge for an hour to chill. Once chilled you can pop them in a container in the fridge or freezer.
