Messy. Fair warning here these are messy. But delicious and OMG so moreish! Last time I had sauce dripping down my arm. I probably could have drained the chicken a little more but instead I started eating and 4 of these babies later….. 

I used cos lettuce leaves as that’s what was available but you could use any lettuce leaf you like so long as you can wrap it up.  I do love making little burrito rolls with the cos lettuce as it’s nice and strong for wrapping.

I’d never had mango salsa until this recipe and it’s amazing. I am definitely keeping the recipe aside for summer barbeques. Let me know what you serve the mango salsa with on social media. #datewithmykitchen

Method

1.

Place the chicken, tomatoes, chicken stock, capsicum, garlic, onion, lime juice of 1 lime, ginger, chilli flakes, cumin, paprika, brown sugar, salt and pepper in your slow cooker. Stir to combine. Turn on high and cook for 3 hours.

While the chicken is cooking prepare the mango salsa. Prepare at least an hour before you are ready to serve so the mango can soak up all the flavours. In small bowl toss together the mango, onion, parsley and the rest of the lime juice and set aside in the refrigerator until ready to use.

After 3 hours remove the chicken and shred with two forks, add chicken back into the sauce and stir. Let sit for 15 minutes then strain chicken into small bowl with a slotted spoon.

To put together your lettuce wraps place a couple of spoonfuls of chicken in the centre of a lettuce leaf. Top with mango salsa and avocado. Add any other toppings as desired. Wrap the lettuce leaf up like a burrito and enjoy.
